I always use 1/3 mature cheddar 1/3 danish blue 1/3 shortcrust pasty and a few drop of oil.

shortcrust pastry, seriously rank soft blue cheese, anything will do as long as it really, really stinks, and I add grated parmesan but any strongish hard cheese will do. Flavoured oil, garlic etc to taste

Danish Blue, Stilton, Brie or any smelly soft cheese mixed with (defrosted) frozen pastry mix (the stuff for shortcrust, not puff, pastry). You can add cheese powder / cheese sauce mix etc, if you like.

Hi
Just made up a batch yesterday 1/3 rd pk of short crust pastry, 250gm very strong cheddar, 125gm danish blue cheese, 2 ml of blue cheese flavour & 1 pkt of cheese sauce mix. You can add essential oil / colours if you like Grate cheese, mix with pastry & flavour for min of 10 mins until very smooth, add cheese sauce mix, mix well again, place into plastic bags, store in fridge/ freezer hope this helps regars wayne |

dont throw the left overs away, bob it back in freezer and re-use, every time you do this it gets stronger

thanks to all master chefs
I managed to get hold of some danish blue, grated parmesan, frozen shortcrust, almond oil, and some yellow food colouring. left it in the fridge overnight, but it seems to have gone a bit soft and sticky, and wouldn't hold onto the baitholder for long enough. more pastry required, methinks. definitely hustles though! with the yellow colour, my fingers look like I've been smoking 60 a day all my life...... dan |

Hi Dan, rather than more pastry do as suggested by others, get some Bisto cheese sauce mix (from supermarkets), That will dry it out AND add flavour.

Puff pastry works better than than shortcrust. About 50% pastry gives you a nice consistency.
Bread is more or less useless and the resulting "paste" will quickly disintegrate in water. Steve |

will give it a try while I was fishing yesterday, some little terrier came up and started helping itself to the paste. obviously not stinky enough! puff pastry is layers of shortcrust with butter in between, rolled out......isn't it? maybe that could be used, but with less oil? thanks again for your advice |
