I had a problem with the cheese wire effect of the hair cutting through it. I've overcome this by threading a fine bore piece of plastic tube onto the hair and making sure it can't come off with a dab of super glue (don't want to feed the fish pieces of plastic do we?)
Used to be a spaghetti user but have moved on!
My way of fishing big meat is pretty easy.

Size 2 hook with a piece of stiff tubing on the hooklength to prevent cut throughs on the cast. The hook is pulled through the bait using a baiting needle. The needle is the used to cut a groove in the meat into which a piece of matchstick goes. Having it in a recess stops the stop flying off and also helps keep the bait on when bits are pecking away.

Jim
If you are using stiff tubing, cut some serrations into it.
- make up a load at home with Stanley/Model Knife
Attach as with your idea.
Once pushed into the meat,
turn by about 90 degrees and hangs on even more.
The serrations cut into the meat internally
Cheaper than Enterprise Boilie Spikes - which work
Another alternative is a wire spring
- pliers and paper clip, tie onto short hair.
- or buy the ones in tackle shop
screw them...
