The Fox pellet pegs (in 11, 13 and 21mm) are a cheaper alternative to their meat stops. The only thing is that the pellet pegs are brown.
When varying the size of a bait, sometimes find it useful to tie a short loop (knotless knot but with the tag end trapped by the turns if your knotless) that comes off the shank and then attach a bait band (or elastic loop) and use this as the hair. A sort of adjustable hair so you can try a variety of sized baits without altering the hair distance...

The Drennan rig rings in Mini and Medium (?) also do an excellent job. The Micro size, incidentally, is fitted to virtually every hair I use now when fishing larger drilled pellets. Put a loop of nylon through the ring once you have pulled it and the hair through the pellet, insert a section of fine, brown rubber band (WH Smith's) into the loop, pull it through the ring, draw the rubber into the pellet and adjust hair length, and secure band and pellet with a drop or two of superglue so that...

Most meat is fairly soft hence burying the hook in it works. You could try multiple chunks of smaller pieces
For hair rigging meat, a standard hair does not suffice as it typically cuts through the meat, Hair plus plastic tubing is better. If the tubing is stiff enough you can push it through the meat rather than use baiting needle.
A sliver of cork between the bait and hair stop helps too, and counter balances weight of hook. For bait stops, I have used bought ones, blades of grass,...

i hair rig large bits of meat, but you have to really think about the cast, if im fishing close in i use meat, far out i use something a bit tougher, like a pellet or boilie. meat is a deadly bait tho, what i do is take a 'cube' (any shape really) thats about 1-2 inches, find the nearest tree, and a stem from a leaf or split a small twig thats just smaller than the meat, use it as the hair stop. this'll hold it on, it does me well and costs.... nowt<img...

Sort of mentioned already, but...

...(for example): take a cube of meat, slice it into three of four equal slithers, and hook each one in turn. That way you get the benefit of more flavour leakage and more chance of some or all of the meat staying on the hook if some of it falls off. You can always break bits off the meat if you aren't happy with a cube-shape!

You basically push a length of plastice tube through the lump of meat then thread this on the hair, then use the stopper that hooks into the hair loop. I've used this when using meatballs and it does work if being a little fiddly.

Why bother with a hair rig. Fish a large piece of meat on the bobbin. If the chub or barbel get finicky, pick up the rod, open the bail arm and touch leger letting the fish take as much line as they need to feel confident in moving off with the meat. When they are clearly racing off, fold over the bail arm and tighten up. Works a treat.
